Since making the move from Sharpham to Sandridge Barton, honouring our rich history as we grow the Sandridge Barton name has been a delicate balance. The next natural step is to bring our classic Sharpham range in line with the Sandridge Barton brand... and we're pleased to introduce the new 2021 vintage of our Classic Cuvée, featuring the first of our new labels for the Sharpham range. An evolution in both design and winemaking, and laying the foundation for the future.
The Classic Cuvée 2021 was produced in the traditional method, allowing for careful oxygen ingress to develop layers of complexity in what is an expressive and nuanced bottle of bubbles.
This year, we decided to amp it up by using 37% Pinot Gris, giving the blend more depth and structure.
25% of the wine was matured in old French oak barrels for six months and the wine then matured for a further 20 months on the lees in bottle.
Compared to the 2020 vintage, this one's a touch drier with rich aromas of apple strudel, baked pastry, lemon rind and sultana. We finished it with a precise 1.5 g/l dosage, just to gently round off the palate.
With only 7200 bottles produced, this is a fairly small-batch sparkling wine, perfect for special occasions and pairing with many dishes such as fresh oysters, seaside fish and chips or smoked salmon and poached eggs if you fancy an indulgent breakfast.
